It is simple, not super healthy, but not unhealthy either. The kids will love it.
- 6 small squash or 3 medium squash
- ½ onion
- 2 slices of bacon
- Salt and pepper to taste
- 1 box of stovetop stuffing
- 4. Tbs. butter
- 1 c. water
Chop bacon and using a hot skillet sauté till almost cooked, add onion and thinly sliced squash. Cook until done. Squash should be soft. Do not drain; add stovetop stuffing mix and 1 cup water to the skillet and cook until soft. Mix it all together. Transfer to a 2-quart casserole dish and sprinkle with cheese of your choosing. Cover with tinfoil and bake at 350 for 15 minutes.
