What to do with all the Broccoli in your CSA? Classic Chicken Divan, an palsy but a goody!
The Players:
The Game:
- 2 large heads broccoli florets ( 6 cups)
- 6 tablespoons butter
- 1 tablespoon chopped fresh sage or 1 teaspoon dried sage
- 1/2 cup flour
- 4 tablespoons sherry or dry white wine. You may substitute chicken broth.
- 1 cup milk
- 1 cup heavy cream
- 1/2 teaspoon nutmeg
- Black pepper
- 1 cup chopped onion
- 8 ounces shredded cheese of your choice
- 3 1/2 cups cooked chicken
- 1/2 cup slivered almonds
- 1/2 cup grated Parmesean
- 1/4 cup breadcrumbs
The Game:
- Butter a 3 quart casserole dish or 9x13 baking dish.
- Boil salted water and cook broccoli until bright green but still firm. About 5 minutes. Drain and run under cold water to prevent more cooking! Set aside.
- Dice chicken, chop onion, grate cheese.
- In a large saucepan melt butter and add flour. Whisk together to form paste.
- Add milk, cream, wine, chicken broth, nutmeg, salt and pepper. Whisk together, add onion. Cook until thickened, 7 to 8 minutes, whisking occasionally to prevent lumps.
- Add cheese, stir until melted and remove from heat.
- Place chicken and broccoli in the bottom of dish. Pour sauce mixture over broccoli and chicken. Stir together bread crumbs, Parmesan cheese and 1 tablespoon melted butter. Sprinkle over the top.
- Cook at 350 for 40 minutes! It will be browned and bubbly.
