- 2 tablespoons olive oil
- 1 onion, chopped
- 1 tbs chopped garlic
- 4 cups chicken broth
- 3 cups chopped cooked chicken
- 1 15 ounce can black beans
- 1 14.5 oz can diced tomatoes
- 1 1/2 cups corn
- 7 ounce can green salsa or 4 ounce can chopped green chilies
- 1 tablespoon chili powder
- 1/4 cup cornstarch
- 1/4 cup water
- 1/2 cup sour cream
- Juice from 1/2 lime
- 1/4 cup cilantro fresh
Heat oil in a large pot, stir in onions and garlic until soft.
Stir in broth, chicken, black beans, tomatoes, corn, salsa, and chilli powder. Cook until simmering.
To thicken soup: add the cornstarch to a small bowl; stir in water, until mixture is smooth. Stir in soup and simmer for 10 minutes.
Whisk sour cream and 1 cup of soup together in a small bowl until smooth, add back to soup and stir.
Stir in lime juice and cilantro. Serve. 😋
