Ziti Casserole with Sausage and Greens
- 1- (1)lb. box ziti
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 (1) lb. package italian sausage, mild sausage or spicy sausage….your choice!
- 1 c. dry red wine
- 1 28 oz. can crushed good tomatoes
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1 c. ricotta cheese
- 1 8 oz. package shredded mozzarella cheese or 2 cups
- cooking spray
- 1/2 c. grated Parmesan cheese
- chopped, fresh parsley
Preheat the oven to 350. Grease an 9 x 11 baking dish. Brown sausage, garlic and onion, (I did not drain, but if you are conscious of the fat feel free too).Add wine to sausage mixture, cook for 5 minutes, stir in tomatoes, basil, salt and red pepper flakes if using. Reduce heat to low and cook for 5 minutes. Meanwhile, cook pasta, drain, while pasta is hot add kale or spinach, mozzarella, and ricotta. Transfer to baking dish. Top with sausage mixture.
Bake at 350 for 25 – 30 minutes or until bubbly and gooey on top!
