Zucchini Subs

Talk about easy, simple and good!
Microwave sausage for about 3 minutes. Pat dry. This gets rid of some of the grease. Cut zucchini length wise, taking off 1/3 of the top. Scoop insides out of the bottom of the zucchini, set aside. (At this point you could place the sausage inside the zucchini, place the top back on, wrap in tinfoil and cook on the grill. the sausage would flavor the zucchini or you could do what I did….) Place bottoms of zucchini in a baking dish, place sausage in zucchini “boat”. Take a 15 oz. can of tomato sauce or any type of pasta sauce and pour on bottom of pan. Add saved . Slice an onion and layer on top of sausage. Cover with mushrooms. Place tops on zucchini. Cover with tinfoil. Bake at 350 for 45 minutes. Remove from oven, take tops of zucchini off and cover with cheese. Put tops back on zucchini. Place back into the oven just until cheese is melted. Scoop “zucchini subs” onto a plate and serve with a salad.
Leftovers with the juice can be served the next night over pasta.
- Zucchini
- Sweet Italian, Keibasa, or Spicy Italian Sausage (You choose depending upon your taste buds)
- any tomato or spaghetti sauce
- mozzarella cheese or any white cheese (Jack, mozzarella, parmesan) Optional: onions and mushrooms.
